Ooops, there goes 3 toenails…..
20km run today in 1:37:56.   approximately 3-5minute slower than race pace. 20km is a piece of cake for me, but today I did something I haven’t done since moving here. I ran Whoop-Up Drive. From G to where it says Scenic Dr, is a grueling long and gradual down hill with an even worse long and gradual uphill. I ran that twice.  The only people who take on that task are those who run for races, bikers, casual walkers, and the drunks on the way home from the bar haha.

Time to eat some pasta, homemade sauce with tomatoes, snap peas, and brussels sprouts, and broccoli and cheese stuffed chicken breast.
I’ve done 5/6 of my finals…last one is on Monday! :) I’ll be heading to Calgary afterwards to go watch my neighbour Boone take on Finland with Team Canada for the pre-tournament game and then heading to the airport afterwards to catch my 6:00am flight home for Christmas!!!!

Tonight’s Dinner with Mum :)
Quinoa Chicken Stirfry
Ingredients:
3 chicken breasts (diced)
1 cup of Quinoa (uncooked)
2 carrots (peeled and sliced)
2 stalks of celery (chopped)
3/4 of cucumber (sliced and cut in halves)
2 slices of red onion (chopped)
1 grapefruit (cut into chunks)
2 tbsp of sun dried tomato dressing
tsp ginger
olive oil
Cook the quinoa according to the package (remember to rinse the quinoa until the water runs clear and there are no more bubbles coming from the quinoa).In a wok, heat extra virgin olive oil and add sliced carrots, cucumbers, celery, and red onion. Add a teaspoon of ginger, cook until there is still a slight crunch. Put into a bowl.
There should still be some oil left in pan, but if not add a bit more and throw in the chicken breast. Add the sun dried tomato dressing and fully cook. Add back the vegetables, once the quinoa is cooked, fluff with fork and add to pan, and add grapefruit. Cook for another 1-2 minutes.
Serve with a side of lettuce/spinach and tomatoes.
*vegans can substitute tofu for the chicken

Last nights dinner, was the night before’s leftovers.
Skinless chicken breast marinated in Five Herb dressing, then baked on parchment paper in the oven at 350o for about an hour, flipping once.
Whole wheat spaghetti noodles boiled in water with a pinch of sea salt, strained, then added parmesan cheese.
Chopped carrot and celery cooked in a wok with olive oil and ginger.
Smoothie -  plain yogurt, mango, melon, grape, peach, banana, spinach, vanilla protein powder.

There are two steps to becoming health; one being smile. Smiling is a mental change not everybody realizes. Smiling keeps you going even when days are tough, to help you realize that you are full of potential. Two being making a physical change by exercising and eating right (with still being able to indulge). Healthy living, not just food and exercise but being happy.
